Delicious & Healthy Gluten-Free Muffins

INTO A LARGE BOWL MIX:

1 3/4 cups brown rice or kamut flour (for non-gluten-free, you can substitute spelt, rye, oat, or wheat)

1/4 cup ground flax seeds

1/2 cup demerara sugar or raw cane sugar

1 tsp baking powder

1 tsp baking soda

1/2 tsp sea salt

1 tsp cinnamon

3/4 cup semi-sweet chocolate chips

IN A BOWL BEAT:

1 egg

1/2 cup apple sauce

1/2 cup plain yogurt (if you are lactose intolerant, use 1 cup of apple sauce instead of adding yogurt)

1 tsp vanilla

2 bananas

COMBINE ALL INGREDIENTS AND STIR UNTIL EVERYTHING IS THE SAME CONSISTENCY

Spoon into muffin cups, filling to the top

Bake at 350 for 22 minutes

Enjoy!!!

*** For children who are picky eaters and won’t eat any fruits or vegetables, you can hide them in the muffins!  Try grating and adding 2 cups of carrots, zucchini, squash, sweet potatoes, apples, and/or pears instead of or in addition to the bananas.
